Ingredients for Homemade Ching's Schezwan Chutney
- 15-20 dried red chilies (adjust spice to taste)
- 1 cup finely chopped garlic
- 1/2 cup finely chopped ginger
- 1/2 cup finely chopped onions
- 2 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tbsp tomato ketchup
- 1 tsp vinegar
- 1 tsp sugar
- Salt to taste
- Water as required
Steps to Make Ching's Schezwan Chutney
Prepare the Red Chili Paste
Take some water in a bowl and soak the dried red chillies in it for 15-20 minutes till they become soft. Now take a blender and blend the soft red chillies in it and make a paste. If required, you can add some water to it.
SautΓ© the Aromatics
Add vegetable oil in a pan and heat it on medium flame. Now add chopped ginger and garlic in it and sautΓ© till it turns golden brown. Now sautΓ© the onions till it becomes translucent.
Add the Red Chili Paste
Now we are going to add red chilli paste in the panΒ which we had already prepared. We cooked this paste on low flame for 5 to 7 minutes. Stir the paste well until the oil separates.
Add Seasonings
Now it’s time to add the sauces. Add ketchup, vinegar, soya sauce and sugar to the paste and mix it well. Add salt as per your taste and balance the flavour of the chutney. Cook the chutney for some more time and adjust its consistency as per your desire. If it is you donβt like thick then add some water and cook for some time.
Cool and Store
